Grated Beet Salad with Apples
Something red and healthy for Valentines Day!
2 Granny Smith apples, peeled and coarsely grated or chopped
2 beets, peeled and grated
1 garlic clove, peeled and minced
¼ cup of balsamic vinegar
¼ cup extra virgin olive oil
Fresh dill for garnish
salt and pepper to taste
Directions:
Place grated apples and beets in a bowl and toss with garlic and balsamic vinegar. Drizzle with olive oil, season to taste and add fresh dill garnish.
